| Vinification: |

Grapes
were harvested avoiding the time of greatest heat
of the day, so that they were cool when they arrived
at the cellar. Once the berries were removed from
their stems, they were taken to the pneumatic
presses so that vintage cooling started immediately.
Smooth pressing resulted in little disintegration
of berries. Berries and musts were allowed to
macerate for 12 hours to extract the greatest
amount of the aromatic substances. Controlled
temperature fermentation took place at approximately
15 ºC, with the aid of selected yeasts. For
this wine, fermentation developed for approximately
20 days. After all the stability, biological and
chemical tests were successfully completed, the
wine was stored in bottles following strict hygiene
standards. |
